Irish langoustine salad with red pepper mayonnaise


20 raw peeled Irish langoustine
2 red peppers
2 tablespoons olive oil
1 tsp castor sugar
1 tsp white wine vinegar
8 tablespoons mayonnaise
Selection of fresh mixed salad leaves
Lemon wedges


Cut the peppers in half and remove the seeds.
Place on a baking tray and drizzle with the olive oil.
Place the peppers under and very hot grill, and grill until blackened on all sides.
Allow to cool, and then remove the skins.
Place the peppers in a blender with the mayonnaise, sugar, vinegar and pesto.
Season to taste.
Heat a frying pan with a little olive oil.
Fry the Irish langoustine for 2 – 3 minutes over a medium heat.
Divide the salad and Irish langoustine between four plates.
Drizzle over the red pepper mayonnaise and serve.
