Curried Irish Langoustine Soup


1 tsp vegetable oil
1 bag stir fry vegetables
1 can coconut milk
1 – 2 teaspoons green curry paste
1 pint fish stock
Dash nam pla (fish sauce)
400g raw, peeled Irish langoustine tails
Bunch fresh coriander


Heat a sauce pan over a medium heat.
Add the oil, and then stir-fry the vegetables for 2 - 3 minutes.
Take out and set aside.
Add the curry paste into the pan and fry for 1 minute over a low heat.
Pour in the coconut milk and stock.
Drop in the Irish langoustine, and then reduce the heat.
Simmer for 3 - 4 minutes, until the Irish langoustine are cooked through.
Stir in the vegetables, garnish with fresh coriander leaves and serve
