Irish langoustines with tomatoes, garlic and parsley

Ingredients

400g dried pasta
2 tsp olive oil
2 garlic cloves, crushed
1 - 2 long fresh red chillies, deseeded, finely chopped
20 Irish langoustine tails or whole langoustine.
2 tablespoons crème fraiche
4 large ripe tomatoes, seeds removed and finely chopped
Splash white wine
1 bunch fresh parsley – chopped

Instructions

Cook pasta according to directions on pack.
While the pasta is cooking, add the olive oil to a pan.
Gently sauté the Irish langoustine, garlic and chilli for 2 - 3 minutes over a medium heat.
Stir in the crème fraiche, tomatoes and white wine and heat gently.
Divide the pasta between four bowls.
Pour over the crème fraiche mixture and serve immediately.
